Pomegranate salad can be made quickly and easily using common household ingredients. Made with shredded chicken, pomegranate seeds, walnuts, prunes, and a few other tasty additions, this salad is perfect for lunch or dinner any day of the week.

Equipment

  • Medium pot or saucepan with a lid
  • Medium mixing bowl
  • 2 small bowls
  • Sharp knife
  • Cutting board
  • 2 forks or a hand mixer
  • Mesh strainer
  • Rubber or silicone spatula
  • Plastic wrap
  • Mixing spoons
  • Measuring cups and spoons
  • Food scale

Ingredients
  

  • 500g chicken breast
  • 2 Bay leaves
  • 1 ½ tsp salt
  • 6 black peppercorns
  • Seeds of one pomegranate
  • 2 cloves garlic, minced
  • 60g walnuts, finely chopped
  • 60g prunes, diced
  • 3 tbsp mayonnaise, plus extra for finishing
  • ½ teaspoon ground black pepper

Instructions
 

  • Add chicken breast to a medium pot or saucepan
  • Remove the seeds
  • Shred the chicken
  • Add pomegranate seeds, garlic, walnuts, prunes, mayonnaise, salt and black pepper
  • Remove the juice from a peeled beetroot
  • Spoon the pomegranate salad mixture into the plastic wrap
  • Release the plastic-wrapped pomegranate salad from the bowl
  • Spoon the beetroot pulp onto the salad
  • Place the stem of the pomegranate on the top of the salad
  • Spoon to spread the remaining mayonnaise on the cut sections of both the removed quarter
  • Press the remaining pomegranate seeds
  • Enjoy!
