How to Store Dumplings

If you’ve bought frozen dumplings from the store, you probably think you should store them in the freezer just as they are. However, freezing dumplings the right way is crucial to making them taste just as good, once cooked, as freshly-made dumplings.

The most critical part of storing dumplings is to prevent freezer burn. This happens when ice crystals transform directly from ice into vapor without going through the liquid water phase. Known as sublimation, this process can be controlled if you limit the airflow around the dumplings.

To do so, freeze dumplings using this method:

  • Line a rimmed baking sheet or large plate with parchment paper
  • Dust flour or cornstarch on top of the parchment paper
  • Neatly place the dumplings on the tray, leaving a bit of space between them
  • Place the tray full of dumplings in the freezer until frozen
  • Once the dumplings are completely frozen, transfer them into a bag thicker than a standard freezer bag – one that is specifically designed to alleviate freezer burn
  • Squeeze the air out of the bag and seal it
  • Place the bag in the freezer and store the dumplings for up to two months
